Oven roasted spring lamb

-1 lamb shoulder, 1.2 kg
-3 chopped garlic cloves
-1 small bunch of rosemary chopped
-1 tablespoon chopped thyme
-1/2 cup olive oil
-1/2 cup white wine
-2 tablespoons white wine vinegar
-salt and freshly ground pepper

Preheat oven to 160°C. Mix rosemary, garlic, thyme, salt and pepper in a bowl. With a pointed knife make several incisions on the meat surface and stuff openings with the herb mixture. Place lamb on a roasting pan and drizzle with the olive oil. Season well with salt and pepper. Roast for 1 hour and 20 minutes and drizzle meat with the white wine and vinegar. Increase heat to 220°C and continue roasting for another 10 to 15 minutes. Remove pan from oven, let the meat rest for 10 minutes and serve.
