Turkey baked in paper

-1 turkey 3-4 kg
-1/2 cup olive oil
-1/2 cup white wine vinegar
-2 teaspoons honey
-1/2 cup of orange jam
-1 small bunch of rosemary
-1 small bunch of thyme
-salt and freshly ground pepper
-3 sheets of baking paper large enough to wrap the turkey
-kitchen string

Preheat oven to 160°C. Wash the bird well inside and out and pat dry with paper towel. Oil skin and cavity well with the olive oil and season with salt and pepper. Warm the vinegar slightly and add the honey to it. Mix well to combine. Brush the bird's cavity with the vinegar mixture and the jam. Repeat the same with the outside part. Season again with salt and pepper and place the rosemary and the thyme in the cavity. Brush all three pieces of paper with olive oil. Wrap the bird with the paper in three layers and tie the paper with the string in several places to secure it. Lay the bird directly on the oven grate, place a roasting pan under it to catch juices that might escape, and roast in the oven for 3 hours. Take the bird out of the oven and place it in the same roasting pan. With scissors, cut the string and remove the paper. Collect all the juices in the pan. Discard string and paper and return the turkey to the oven. Roast for another 30 minutes, till the skin gets golden brown and the meat is very tender. Remove from oven, let rest for 10 minutes, slice and serve with the pan juices.
