Roast pork on lemon leaves

PREP TIME 30 minutes
-2 kg pork shoulder
Preheat oven to 180°C. Wash meat well and dry with paper towel. Make several incisions on the meat's surface, 3 cm deep. Stuff the openings with salt, pepper, lemon juice and chopped lemon leaves. Season the whole roast with salt and pepper. Lay lemon leaves on the bottom of a roasting pan. Place meat on top with skin side facing down. Roast meat, partially covered with a piece of aluminum foil, in the oven for 3 hours, turning over several times. Remove foil and continue roasting for another hour. Discard lemon leaves and serve after letting it rest for 10 minutes. Use juices to moisten the meat after plating.
